Last week I put together this easy pasta dish that was tasty and super speedy! I thought I would share since I took pictures and all! Ha, you would think I was a wanna be food blogger with all these food posts of late (here and here)! Not so much…I know WAY more about breastfeeding than cooking yummy meals, but this one was for real a winner!
A 15 minute meal for two that was super delicious, way quick with no fuss, and easy to adjust ingredients for 2 adults! Those pretty much are my requirements when cooking. I mean from start to finish, including chopping up the head of broccoli, plating, and taking pictures, it was about 20 minutes; I’d say 15 minutes of actual cooking, TOPS. So, here we go…
Ingredients (for 2):
- 1/2 package of preferred smoked sausage/kielbasa, sliced
- 1 head of broccoli, chopped
- 6-7 large sun-dried tomatoes packed in oil, sliced or cut in half
- crushed red pepper flakes to desired spiciness (I used about 1/4 tsp.)
- 1 tsp. minced garlic
- 4 oz. (or whatever amount you want) angel hair pasta
Begin boiling a pot of water for your pasta. Drop pasta into pot whenever boiling begins and drain whenever it reaches al dente. Heat extra-virgin olive oil over medium heat. Add minced garlic and red pepper flakes to olive oil. Let cook until the garlic is tender and smells oh so good! Add broccoli to the oil mixture, stirring for about 2 minutes. Toss the tomatoes in and warm through about 1 minute. Add the sliced smoked sausage. Let it brown on one side then stir/flip to brown on the other side. Place over cooked pasta and slurp it right on up as if it were messy spaghetti and you were 3!
I’m telling you…quick, easy, and delicious. Win, win, win in my book! Also, you can adjust any of the ingredients to your liking, for example use turkey smoked sausage for a lower fat option, etc..
