Remember my obsession with coconut oil?  Instead of rubbing down Jackson and myself in the wonderful stuff, I have decided to coat some popcorn for a healthy and sweet alternative to butter.  I sprinkled a cinnamon, sugar mixture for the most perfect of late night snacks!  Jackson was eyeballing me like none other…sorry buddy, maybe a few more teeth and then you can try it :)

Sorry for the lack of pictures…It was way late and dark and I was too interested in getting the popcorn in my mouth :) !  So just close your eyes and pretend you see a picture of some delicious looking cinnamon, sugar popcorn….mmmmmm, didn’t that feel te exact same as looking at a wonderful photograph?  Thought so.  Enjoy!

Recipe: Cinnamon, Sugar, and Coconut Oil Popcorn {Serves 1}
 Ingredients:
  • 100 calorie popcorn bag (I used homestyle because that is what I had on hand) or 2 cups popped popcorn
  • 1 tsp coconut oil (I love and use Kelapo Coconut Oil)
  • 1/2 tsp sugar
  • sprinkling of cinnamon (to taste)
Directions:
  • Pop popcorn per package directions and pour in a large serving bowl.
  • Mix cinnamon and sugar while popcorn is popping.
  • Spoon coconut over popcorn, stir to coat (coconut oil is solid at room temperature and will melt and soften as you stir it into the hot popcorn).
  • Sprinkle cinnamon, sugar mixture over popcorn to taste.  Make sure you stir it to get all of the popcorn!
  • Enjoy, share (or don’t), and enjoy a healthier alternative to butter laden popcorn!

I am sure you could do all kinds of other flavor combinations…chili powder, salt, parmesan, black pepper, garlic powder, anything I would imagine.
